Under the watchful eye of head chef Mario Otegui, the taster menu of five dishes complete with wines is a good place to start but he knows his young recruits will need to have broad horizons and this is where your experience will come alive; soldier shrimps in tempura with curry and cocont mojo... exotic and exquisite fusion at it's best.
Then again you may be lucky enough to visit on one of their theme days when a cooking style or country is chosen... you're never too old to learn how the 'other half' eat!
